Traditional-method sparkling wine

Traditional-method sparkling wine undergoes a second alcoholic fermentation in the bottle. Yeast converts an added fermentable sugar into alcohol and carbon dioxide; because the bottle is sealed, much of the gas dissolves in the wine. The wine then matures on the resulting yeast lees, which are moved to the bottle neck by riddling and expelled at disgorgement before the bottle is closed for sale.

This sequence distinguishes the traditional method from tank fermentation and direct carbonation, but it does not define one flavour or level of quality. Grape variety, growing conditions, harvest date, base-wine production, blending, time on the lees, dosage, and post-disgorgement age can each remain apparent. Champagne, Cava, and other protected names add their own rules to the underlying method; none is a synonym for every traditional-method wine.

How it is made

The process starts with a still base wine. Grapes are commonly picked with less sugar and more retained acidity than fruit intended for many still wines because the second fermentation will add alcohol and the finished wine must balance both carbon dioxide and any residual or added sugar. This is an objective rather than a universal recipe. Climate, variety, fruit health, intended ageing, and local rules determine a suitable harvest point.

Pressing and first fermentation establish much of the wine's identity. Rapid, gentle pressing can produce pale juice from dark-skinned grapes such as Pinot Noir, while longer skin contact can make rosé. A producer may keep parcels and varieties separate, ferment in steel or wood, allow or prevent malolactic fermentation, and blend across vineyards, grapes, or vintages. Reserve wines from earlier years can change maturity and consistency. The base wine is therefore not a neutral carrier waiting for bubbles.

At tirage, the base wine or blend is bottled with yeast and a liqueur de tirage containing fermentable sugar; nutrients and a riddling aid may also be used. The renewed fermentation raises the alcohol modestly and generates carbon dioxide under pressure. This is a separate fermentation of finished base wine, not simply the continuation of the grape must's first fermentation. The core bottle-fermentation sequence recognized by the International Organisation of Vine and Wine then proceeds through storage, riddling, disgorgement, and, where used, dosage.[1]

After fermentation, the yeast settles as lees. During maturation, dead yeast cells gradually break down through autolysis, releasing compounds including peptides, amino acids, mannoproteins, and other polysaccharides. These can affect texture, aroma, stability, and foam, while fermentation-derived aromas and the base wine itself also continue to change. Time on lees can therefore move a wine away from simple youthful fruit and toward more mature, savoury or bread-like impressions, but neither the rate nor the sensory result is fixed. Temperature, yeast, wine composition, closure, oxygen exposure, and duration all matter. A controlled study of Chardonnay and Pinot Noir wines over 24 months found that base wines aged without lees developed similarly to sparkling wines in some chemical and sensory comparisons. The result cautions against attributing every aged character directly to autolysis.[2]

Riddling, or remuage, solves the practical problem created by the lees. The bottle is turned in increments and gradually tilted neck-down so that the sediment gathers against the closure. This can be done by hand on racks or mechanically in rotating cages; the purpose is the same, and riddling itself neither creates the bubbles nor ages the wine. At disgorgement, pressure expels the collected deposit, usually as a frozen plug. The wine loses a little volume and is briefly exposed during the operation, making control of oxygen and wine loss important.

The bottle is topped up before its final closure. A producer may add a liqueur d'expédition of wine and sugar; this is dosage. Its sugar helps determine the finished sweetness and its wine component can also affect flavour. Some wines receive no added sugar, although they still need their volume restored. Dosage cannot be read in isolation: the same amount of sugar may seem different against different acidity, alcohol, phenolics, dissolved carbon dioxide, and maturity. Nor is a lower dosage inherently a higher qualitative rank.

Character and variation

The grape material sets the range within which the method works. Chardonnay and Pinot Noir can be blended or bottled separately; Chenin Blanc brings a different acid and aroma profile; Cava commonly draws on Macabeo, Xarel·lo, and Parellada; and Bairrada can use Baga and several white or red varieties. White, rosé, and, in some regions, red sparkling wines can all follow bottle fermentation. The method creates effervescence and lees contact, not a grape flavour of its own.

Base-wine choices can be at least as consequential as time in bottle. Earlier picking usually preserves acidity but may limit ripeness; later picking can add weight while raising potential alcohol and reducing the margin for a second fermentation. Malolactic fermentation changes the acid profile, wood changes aroma and oxygen exposure, and blending a young wine with reserves differs from showing a single harvest. Extended lees ageing may bring greater compositional change, but it is not a linear quality scale and can preserve, obscure, or transform different parts of the base wine. Disgorgement ends contact with the deposit; subsequent bottle age then proceeds under a new closure, with dosage and oxygen admitted during disgorgement forming part of the starting point.

Regional rules select among these possibilities. Current Champagne provisions require bottle fermentation and at least 15 months of cellar ageing for non-vintage wine or 36 months for vintage wine. Cava requires at least nine months in contact with the lees in the bottle; its Reserva, Gran Reserva, and Paraje Calificado categories raise the minimum period from tirage to disgorgement to 18, 30, and 36 months respectively. DO Bairrada requires classic bottle fermentation and at least nine months at the producer's premises after bottling. Their permitted grapes, vineyard boundaries, pressing rules, base-wine limits, and labelling categories also differ.[3] These minima describe legal eligibility, not identical wines or guarantees that longer ageing will always be preferable.

Traditional-method wines are consequently made in many places under names such as Champagne, Cava, Crémant, Franciacorta, Trento DOC, Cap Classique, and English sparkling wine, as well as without a protected regional name. Reading the place, grapes, vintage or non-vintage status, lees time, disgorgement information, and sweetness category together is more useful than treating “traditional method” as a complete style description.
