Chenin Blanc
Also known as Chenin, Pineau de la Loire, Steen
Chenin Blanc is a white Vitis vinifera variety with historic roots in the Loire Valley and a second major home in South Africa. Its capacity to retain substantial natural acidity as the grapes accumulate sugar gives growers and winemakers room to make markedly different choices. Growers can pick fruit for dry sparkling wine, allow it to ripen for dry or off-dry still wine, or leave it to concentrate for sweet wine.
Harvest date changes the balance among sugar, acidity, flavour development, and fruit health, while fermentation determines how much grape sugar remains in the wine. In suitable autumn weather, Botrytis cinerea can add another route to concentration and alter the grape's composition. In persistently wet conditions, the same fungus is destructive.
History and names
France's Plantgrape catalogue places Chenin's origin in the Loire Valley and tentatively in Anjou. The original seedling's site and date remain unknown. Pineau de la Loire is a traditional regional name. Steen, long used in South Africa, denotes the same variety rather than a distinct Cape form.
Viticulture and harvest decisions
Chenin is vigorous and fertile, and its crop can rise substantially on fertile soils. French observations place budbreak early, making spring frost a concern; secondary buds carry little fruit after frost damage. The variety reaches maturity in the middle part of the season in the French reference collection, but an appellation, site, or year can shift the practical harvest window.
Grapes for sparkling base wine are commonly picked while sugar is relatively low and acidity remains pronounced. Waiting can bring more sugar and a different flavour and texture balance, supporting fuller dry wines or leaving enough sugar for an off-dry or sweet wine. It also extends exposure to rain, birds, and rot. Vouvray's rules make the differing objectives unusually clear: they set a lower minimum grape-sugar level for sparkling and lightly sparkling base wines than for still wine.[1] These legal thresholds illustrate a harvest decision; they are not universal ripeness targets for Chenin.
Ripeness is also uneven within a vineyard and even within a bunch. Successive passes allow pickers to separate sound, moderately ripe fruit from later, shrivelled, or botrytised berries. The method is slow and weather-dependent, but it can turn harvest from a single date into a sequence of selections.
Chenin is susceptible to grey rot, as well as powdery mildew and grapevine wood diseases. Noble rot occurs when B. cinerea develops slowly on ripe or overripe berries under particular conditions, often involving periods of moisture followed by drying. The fungus alters berry metabolism, and cracks in the skin promote water loss, concentrating the remaining juice. Continued humidity favours bunch rot, which can damage the fruit and complicate fermentation. The outcome also varies with cultivar, berry condition, vineyard practice, and the berry's wider microbial community.[2]
Sweet Chenin therefore need not be botrytised, and botrytised Chenin need not come from uniformly affected bunches. The current Coteaux du Layon rules require overripe Chenin harvested by successive hand selections; natural concentration on the vine may occur with or without noble rot. Only the more specific sélection de grains nobles category requires concentration by noble rot.[3] Simple dehydration concentrates what is already in the berry, whereas Botrytis also changes its chemistry.
Wine styles and cellar choices
For dry sparkling wine, relatively early-picked grapes supply a base wine with moderate potential alcohol and firm acidity. The first fermentation produces a still wine; a second fermentation creates carbon dioxide. In Vouvray that second fermentation must occur in bottle, and the wine must mature for at least 12 months from tirage. Time on the spent yeast can broaden texture and add fermentation-derived character, while dosage after disgorgement helps determine the final sweetness.
For dry still wine, the juice is fermented until little grape sugar remains. Harvesting somewhat later can provide more potential alcohol and ripeness, but the result also depends on pressing, fermentation vessel and temperature, lees contact, malolactic fermentation, and maturation. Stainless steel can preserve a more direct expression; wood and lees can add breadth or oxygen exposure. Fruit condition and acidity set the limits of these cellar choices.
Off-dry and sweet wines retain unfermented grape sugar. A winemaker may stop and stabilise fermentation, or fermentation may slow in a highly concentrated must; botrytised musts are especially demanding to ferment cleanly.[4] Noble rot itself does not create residual sugar: it dehydrates and transforms the berries before yeast converts part of their sugar to alcohol. High natural acidity can keep sweetness from feeling shapeless, but the balance varies with harvest concentration, fermentation, and final composition.
That combination of acidity, concentrated fruit, and residual sugar can support prolonged bottle development in carefully made sweet wines. Coteaux du Layon's official specification describes such wines as suited to extended ageing and relates their evolution to the balance among acidity, alcohol, and texture. Longevity also depends on healthy fruit, sound fermentation, stabilisation, oxygen management, closure, and storage. Dry Chenin can also age when its structure and production support it.
Where it is grown
The middle Loire displays the stylistic range most explicitly. Savennières and dry Anjou foreground still wine; Vouvray and Montlouis-sur-Loire encompass still and sparkling traditions; Coteaux du Layon, Bonnezeaux, and Quarts de Chaume are associated with sweet wine from concentrated fruit. Vintage conditions can change which styles are practical, especially where late harvest and noble rot depend on autumn weather.
South Africa is the variety's other principal centre, where it was long known as Steen. Across the Western Cape, Chenin is used for dry still wines of very different weight and maturation, sparkling wine, sweet wine, blends, and distillation. Warm inland sites, cooler maritime influence, water availability, vine age, yields, and harvest date produce widely varying profiles. The International Organisation of Vine and Wine's 2017 survey, based largely on country data from around 2015, recorded Chenin as South Africa's most planted variety at that time; the figure is not a current area estimate.
Chenin is also grown beyond these two centres. In each place, site, harvest condition, and production method shape the balance of acidity and sugar in sparkling, dry, and sweet wines.
