Residual sugar
Also known as RS
Residual sugar is the sugar remaining in finished wine. In winery analysis, the most useful measurement is usually the combined concentration of glucose and fructose, the principal fermentable grape sugars, expressed in grams per litre. The result helps explain sweetness and indicates how much substrate remains available to microorganisms.
Sugar concentration and perceived sweetness are closely related, but acidity and the kinds of sugar present alter the impression. Knowing the analytical value helps most when the wine's style and composition are also known.
How sugar remains
During alcoholic fermentation, yeast consume glucose and fructose and produce alcohol and carbon dioxide. Yeast commonly consume glucose more readily, leaving a greater proportion of fructose late in fermentation. The balance depends on strain and conditions. Fructose also tastes sweeter than glucose at comparable concentrations, so the proportions can influence the sweetness of the finished wine.1. Fermentation may stop deliberately or through difficulty. High alcohol, nutritional limitations, and other stresses can prevent yeast from finishing the available sugar. A fermentation that has stopped changing can therefore still contain appreciable fermentable sugar. Monitoring sugar consumption helps distinguish completion from a stalled fermentation.
In fortified wine, the timing of spirit addition offers deliberate control. Madeira producers, for example, interrupt fermentation according to the desired sweetness. Earlier interruption preserves more of the grape sugar; longer fermentation consumes more before fortification. Finished wine can also be sweetened with grape juice or concentrate where the applicable rules permit. These different routes can produce different glucose-to-fructose balances.
Measuring sweetness and dryness
Glucose and fructose measurements are particularly useful because both sugars affect taste and can support further microbial activity. Enzymatic assays use reactions specific to the sugars being measured, allowing laboratories to determine small quantities in otherwise dry wine.
Older “reducing sugar” methods also respond to other sugars and can yield different results. Small quantities of pentoses, sugars that ordinary wine yeast leave largely unfermented, may remain even when glucose and fructose are nearly exhausted. They contribute relatively little sweetness. The analytical method therefore matters when interpreting a claim about how dry a wine is.
The acidity provides another part of the tasting context. A wine with substantial sugar can retain a strongly acid impression, as Madeira illustrates. Its local terms for dry and sweet belong to a distinctive fortified style. Stability after fermentation
Residual glucose and fructose can feed surviving yeasts and bacteria. Sugar analysis therefore serves a practical purpose beyond describing flavour: it helps assess the possibility of further fermentation or spoilage. A sweet wine requires a preservation strategy suited to its alcohol, acidity, microbial population, and intended storage. Suitable filtration can remove microorganisms, while sulfur dioxide can inhibit their growth. The remaining sugar must be considered alongside these controls.
