Fortification raises a wine's alcohol content by adding spirit. The timing of that addition has a major effect on sweetness. Added during alcoholic fermentation, enough spirit interrupts yeast activity and leaves some grape sugar unfermented. Added after a wine has fermented dry, spirit raises alcohol without restoring the sugar already consumed.

Port, Madeira, and Sherry illustrate how this one operation serves different purposes. It can preserve sweetness, prepare wine for long maturation, or help select the biological conditions under which it ages.

Timing and retained sugar

In Port production, the winemaker adds grape spirit while fermentation is underway. The Instituto dos Vinhos do Douro e do Porto, the regional regulatory institute, describes using certified spirit at 77% alcohol by volume. The sudden increase in alcohol interrupts fermentation at the chosen sweetness.1. The resulting wine contains alcohol made by the yeast and alcohol supplied by the spirit, together with residual sugar from the grapes.

For red Port, colour and tannin extraction must fit into this shortened fermentation. Contact with skins and techniques such as treading or pumping juice over the solids help extract material before fortification. Subsequent maturation then separates the styles: more protected storage preserves the fruit-led character associated with ruby wines, while prolonged cask ageing supports the oxidative development associated with tawny.

Madeira producers also use fermentation timing to obtain their intended sweetness. The island's regulatory institute describes fortification with vinous alcohol at 96% alcohol by volume.2. Allowing more sugar to ferment before the addition moves the wine toward the drier end of Madeira's range. Controlled heating or warm cask maturation follows, giving heat and oxygen a further role in developing the wine.

Alcohol and biological ageing

Dry Sherry offers a different sequence. Producers first ferment the base wine and assess the resulting batches. In the traditional fortification route, wines selected for fino or manzanilla are brought to about 15% alcohol. This supports flor, the film of yeast that grows on the surface and modifies the wine during biological ageing. Wines selected for oloroso are fortified to at least 17%, a level that prevents sustained flor development under these cellar conditions.3. Without that surface film, the oloroso follows an oxidative maturation. Fortification thus helps determine which organisms remain active and which ageing process follows. The result also depends on the starting wine and the cellar environment. These traditional Sherry strengths describe a particular production system, not universal survival limits for every wine microorganism.

Spirit and the finished wine

Spirit strength and final wine strength are different measurements. A highly concentrated spirit enters a much larger volume of fermenting juice or wine, so the blend has a lower alcohol content than the spirit itself. The amount needed depends on both starting strengths and the intended result.

Adding spirit also changes the proportions of sugar, acids, and other grape constituents in the blend. Sweetness therefore depends on both how much sugar remained when fermentation stopped and the composition after blending. A fortified wine's final balance brings together those concentrations, alcohol, and the changes that occur during maturation.
