Sherry
Sherry is the English protected name of the Jerez-Xérès-Sherry protected designation of origin (PDO) in southern Spain. The family includes dry wines shaped by biological ageing under yeast, dry wines aged with oxygen, naturally sweet wines, and blends of dry and sweet material. The related Manzanilla-Sanlúcar de Barrameda PDO is often discussed alongside Sherry, but it is legally separate.
Fortification is central to how Sherry developed and remains normal practice, but it is no longer a universal legal condition. The current specification recognizes both wine and liqueur wine. A qualifying dry wine may reach the required strength without added alcohol, whereas the protected naturally sweet wines are liqueur wines whose must is fortified.[1] This distinction is easy to miss because older accounts define the whole family simply as fortified wine.
How it is made
Most dry Sherry begins with a fairly neutral white base wine from Palomino, although the rules authorize several white varieties. The must ferments dry, and the base wine's acidity, alcohol, pressing fraction, and clarity influence how it will age. Pedro Ximénez and Moscatel de Alejandría are more closely associated with the sweet styles. Grape and vineyard conditions matter, but cellar decisions transform the base wine so extensively that Sherry is best understood through its ageing path as well as its origin in Jerez.
After fermentation, cellars commonly classify lots by their apparent fitness for biological or oxidative ageing. A wine intended to retain flor is traditionally fortified to around 15 percent alcohol by volume; a lot directed toward oxidative ageing is commonly brought to around 17 percent, a level less favourable to the veil. These figures describe established working practice, not a mandatory recipe for every protected wine. Current law instead controls the finished wine's category, analytical range, method, and minimum average age, and allows dry vino generoso with or without fortification.[1:1]
Naturally sweet Sherry follows another route. Must from overripe or partly raisined grapes is fortified before fermentation begins or while it is under way, preserving grape sugar. Sun-drying, or asoleo, is common, especially for Pedro Ximénez, but the rules do not require it for every Moscatel or Dulce. The legal phrase “naturally sweet” therefore identifies the source of the sweetness, not an absence of added alcohol.
Flor and two modes of ageing
Flor is a surface biofilm formed chiefly by specialized strains of Saccharomyces cerevisiae. Once fermentable sugar and other nutrients are scarce, suitable yeasts can gather at the wine-air boundary and switch toward oxidative metabolism. They consume some ethanol, glycerol, and organic acids and produce acetaldehyde and other compounds that alter aroma, texture, and freshness.[2] The veil also limits the wine's direct contact with air. Biological ageing is consequently not oxygen-free: oxygen sustains the yeast, which both shields and actively transforms the wine.
Oxidative ageing takes place without a persistent veil. Direct oxygen exposure, evaporation through the cask, and reactions among wine constituents gradually deepen colour and concentrate or reshape the wine. A wine can pass from biological to oxidative development when flor weakens or disappears. Cask condition, headspace, temperature, humidity, and transfers alter either course. Criaderas y solera
In the dynamic criaderas y solera system, casks are grouped into scales of similar maturity. A periodic saca removes part of the wine from the oldest scale, the solera, for bottling or blending. It is replaced by a rocío from the next-younger scale, which is replenished in turn until young wine enters the youngest criadera. Repeated fractional blending moderates vintage differences and supplies biologically ageing wine with younger material that can help sustain flor. Each cask therefore holds wines of different ages, regardless of the solera's founding date.
This system is customary, but Sherry law also permits static añada ageing, in which harvests remain separate. Both methods use oak casks and protected wines normally require at least two years of average ageing. Solera ageing and biological ageing are independent features, and neither applies to every Sherry.[1:2]
Principal categories
The dry vinos generosos are defined chiefly by their ageing sequence. Fino ages exclusively under flor. Amontillado begins with biological ageing and continues oxidatively after the veil is lost. Oloroso follows an exclusively oxidative course after the initial flor disappears. Palo Cortado is predominantly oxidatively aged after an initial veil, with its identity also resting on the required analytical and sensory profile. A common cellar account describes Palo Cortado as a Fino candidate that unexpectedly changes direction and is fortified again. That is a useful description of traditional selection, not the complete legal definition.[3]
The naturally sweet group comprises Pedro Ximénez, Moscatel, and Dulce. Pedro Ximénez must be based predominantly on raisined grapes of that variety; Moscatel is predominantly varietal but may use grapes with or without raisin drying; Dulce can draw on one or more authorized varieties. All undergo oxidative ageing. Their sugar comes from concentrated grape must whose fermentation was prevented or stopped, so they differ in method from a dry wine sweetened later.
That later blending creates the vinos generosos de licor: Pale Dry, Pale Cream, Medium, and Cream. These combine the character of dry aged wine with naturally sweet wine or other permitted grape-derived sweetening material, within category-specific sugar ranges. Pale styles retain a biologically aged base; Medium and Cream generally move toward the colour and character of oxidatively aged material. The names define regulated style families with substantial variation among producers.
