Tokaj
Tokaj is a wine region and protected designation of origin in northeastern Hungary, along the southern and southeastern foothills of the Zemplén Mountains. Its vineyards extend through 27 settlements toward the Bodrog and Tisza rivers; Tokaj is both the name of one of those towns and the regional name, while Tokaji means a wine from Tokaj.
The region is closely associated with Aszú, a concentrated sweet wine made through the selection and maceration of noble-rotted berries. That association can obscure two useful distinctions. Tokaj also makes dry white, late-harvest, Szamorodni, and sparkling wines, and botrytized sweet wine is a much broader family made in other regions from other grapes and by other methods. Tokaj names a place with its own grapes and rules, not a synonym for every wine affected by noble rot.
Volcanic foothills and autumn humidity
Tokaj lies at the edge of a Miocene volcanic complex rather than on one uniform soil. Rhyolite, andesite, dacite, their tuffs, and rocks altered by later hydrothermal activity weather differently across the foothills. Clay-rich forest soils cover much of this material, while loess is especially important on Tokaj Hill and nearby slopes. Soil depth, fragments of volcanic rock, loess, aspect, and erosion consequently vary between vineyards. These differences can affect drainage, water supply, rooting, and ripening; they should not be reduced to the idea that volcanic rock transfers a literal mineral flavour to wine.
Many vineyards face south, southeast, or southwest, where exposure helps grapes ripen in a continental climate and the Zemplén range gives some protection from cold northeasterly weather. Lower ground, the Bodrog and Tisza, and their wet meadows supply autumn moisture. Humid nights and mornings can encourage Botrytis cinerea to infect ripe berries, while subsequent sun and drier air slow the fungus and promote evaporation through weakened skins. The berry loses water and shrivels, concentrating its juice, while infection also alters grape metabolism and the microbial community.[1]
This sequence is an opportunity, not a dependable regional setting. Persistent wetness can produce destructive grey rot rather than noble rot, and infection develops unevenly among sites, bunches, and berries. Ripeness, berry condition, variety, airflow, and the timing of rain and dry weather all matter. A suitable Aszú harvest may therefore require several selective passes and may be small or impractical in an unfavourable year.
Grapes and dry wine
Six white varieties are permitted: Furmint, Hárslevelű, Sárgamuskotály, Kövérszőlő, Zéta, and Kabar. Furmint dominates current plantings. It can ripen late, retain pronounced acidity, and form useful aszú berries, making it suited to both dry wine and concentrated sweet wine. Hárslevelű, the principal secondary variety, tends to give a more openly aromatic contribution and has looser bunches. Sárgamuskotály—Muscat Blanc à Petits Grains—ripens earlier and adds a distinctly Muscat character. The remaining three have smaller roles but can contribute to dry wines, late-harvest blends, and Aszú.
For dry Furmint or Hárslevelű, growers generally pick sound fruit earlier than they would for a botrytized wine. That choice trades the possibility of later concentration for a balance suited to fermentation to dryness. A producer may emphasize one vineyard or blend sites, ferment in steel or wood, and vary lees contact and maturation. The result can range from direct, relatively early drinking wine to a more structured, barrel-matured expression. Volcanic geology helps explain differences among sites, but grape maturity, vintage, and cellar choices remain just as important. The legal white-wine category does not set a minimum residual-sugar level, so “Tokaji” alone does not tell a reader whether a wine is dry.
Aszú and the legal categories
For Aszú, pickers select individual berries shrivelled by noble rot, often over successive vineyard passes. The berries are opened and macerated in must, partially fermented must, fermenting must, or wine from the same vintage. After pressing, fermentation continues under difficult conditions: the concentrated must places yeast under substantial osmotic stress and may retain considerable grape sugar. Current rules require at least 18 months in wooden barrels, at least 120 grams per litre of residual sugar, and release no earlier than 1 January of the third year after harvest.[2]
The familiar puttonyos scale began as a production ratio: a number of puttony, or harvesting containers of aszú berries, were added to a Gönc barrel of must or wine. Modern production is controlled by analytical and process rules rather than a literal basket count. Under the current specification, Aszú meets the 120-gram minimum, while the expression “6 puttonyos” is reserved for Aszú with at least 150 grams per litre of residual sugar. The number should therefore be read as regulated label language with a historical origin, not as a complete account of sweetness, berry proportion, or quality.[2:1]
Other Tokaj categories separate raw material and method. Eszencia is the minimally fermented liquid that runs under the weight of individually selected aszú berries without pressing; its legal minimum of 450 grams per litre of residual sugar reflects an unusually concentrated product rather than a higher rung of ordinary table wine. Szamorodni instead processes whole bunches in which sound and aszú berries remain together. It may be sweet, with at least 45 grams per litre of residual sugar, or dry, with no more than 9; both forms require at least six months in wood.[3] Late-harvest wine is another sweet category and may include shrivelled or botrytized fruit, but it does not require the Aszú selection-and-maceration process. Fordítás and Máslás, made by extracting pressed aszú material or Aszú or Szamorodni lees, are further legal specialities.
These distinctions are more informative than treating noble rot as a complete winemaking method. Botrytis can influence Aszú, sweet or dry Szamorodni, and some late-harvest wines, yet each handles the affected fruit differently; dry Tokaji may avoid it altogether. Conversely, botrytized wines from Sauternes, the Loire, Germany, Austria, and elsewhere follow their own grapes and rules. What makes Aszú specifically Tokaji is the conjunction of the delimited place, permitted varieties, selective harvest, maceration method, maturation, and legal category—not noble rot by itself.
