Maceration
Also known as Wine maceration
Maceration is the contact between grape solids and juice or wine during which substances pass into the liquid. Skins supply pigments, aroma compounds and their precursors, and tannin; seeds and any retained stems supply additional phenolics. The duration and conditions of contact help determine wine's colour, texture, and flavour.
Maceration can happen before, during, or after alcoholic fermentation. These stages offer different extraction conditions because the liquid changes from sugary juice to an increasingly alcoholic wine, while temperature and the condition of the solids change too.
Extraction during red fermentation
Red winemaking commonly ferments juice together with skins and seeds. Carbon dioxide lifts solids into a floating cap. Cap management brings this material back into contact with the liquid and redistributes heat. In a punch-down, the cap is pushed beneath the surface. A pump-over draws liquid from the fermenter and distributes it over the cap. Rack-and-return drains wine away from the solids and then returns it.
These operations change extraction as well as oxygen exposure. Their effects depend on frequency, force, temperature, and the grapes themselves.
Colour and tannin also follow different courses. Skin anthocyanins, the main red grape pigments, extract early. Later, measured free anthocyanins can fall as pigments react or attach to solids. Before and after fermentation
A cold soak holds crushed red grapes at a low temperature before alcoholic fermentation. This extends contact in a largely aqueous liquid. The intended effects commonly include colour and aroma extraction, but the Australian Wine Research Institute's review finds that outcomes vary with grape variety and growing conditions. Extended maceration usually refers to retaining skins and seeds with the wine after fermentation. Alcohol is now present, and both extraction and phenolic reactions continue. The resulting texture depends on which compounds are available and how readily the grapes release them. The same duration can produce different results in different varieties or vintages.
Prolonged contact can increase bitterness or astringency. Exposed cap material also creates opportunities for spoilage, including acetic acid and ethyl acetate production when oxygen and suitable microorganisms are present. The decision to press ends this phase of contact and separates wine from much of the remaining solid material.3. White grapes and shorter contact
White-grape skin contact can add aroma and body before fermentation. Some contact already occurs when mechanically harvested or crushed fruit waits for pressing. Deliberately extending it changes how much the juice extracts.
Skins also release potassium, which can raise pH and reduce titratable acidity. Longer or warmer contact generally increases extraction, including phenolics that contribute bitterness. Fruit condition matters: damaged or botrytized fruit can introduce enzymes that accelerate oxidation. The useful duration therefore depends on the grapes and the intended wine.4. Fermenting white grapes with their skins produces the much longer contact associated with skin-contact white wine. Such wines can acquire substantial phenolic texture despite having no red skin pigments. Whole-cluster fermentation adds the further variables of intact berries and stems; carbonic maceration involves metabolism within intact berries as well as the extraction that occurs as they break down.
