Sémillon
Also known as Semillon
Sémillon is a white Vitis vinifera variety most closely associated with Bordeaux and Australia's Hunter Valley. It can produce dry wines on its own, form a complementary blend with Sauvignon Blanc, or provide the base for concentrated sweet wine. These uses draw on the same traits—generous palate weight, often moderate acidity, and sensitivity to Botrytis cinerea—but direct them toward strikingly different results.
The variety is often described as waxy. That word can refer to a smooth, mouth-coating texture, a beeswax- or lanolin-like aroma, or both. It is best understood as sensory shorthand rather than the effect of one known compound. Ripeness, acidity, botrytized fruit, lees, wood, and bottle age can all reinforce or diminish the impression; young Hunter Valley Sémillon, for example, can be light and taut rather than overtly broad.
Origin and viticulture
The French Plantgrape catalogue places Sémillon's origin in the Bordeaux vineyards, though a more precise birthplace and early history are not securely established.[1] The same catalogue describes a moderately vigorous, productive, mid-ripening vine with medium bunches and large berries. Yield varies strongly with site and farming, so productivity does not translate into one fixed wine character.
Sémillon is sensitive to grey rot as well as several other vineyard pests and diseases. Wine Australia also characterizes it as thin-skinned. This susceptibility is not automatically an advantage: rain and sustained humidity near harvest can produce destructive rot, dilute fruit, or force an early pick. Where sound grapes reach ripeness and autumn weather alternates humid periods with drier conditions, however, the same fungus can develop as noble rot.
Why noble rot matters
Noble rot is a particular course of B. cinerea infection, not a separate organism. Moisture allows the fungus to establish itself on ripe berries; later drying slows its spread and encourages water loss through damaged skins. The berry shrivels, concentrating sugar, acids, and other dissolved material. At the same time, fungus and berry alter the fruit's metabolism, so the result is not equivalent to simply evaporating water.
A three-year field study of naturally infected Sémillon berries found changes in organic acids, sugars, phenolic pathways, terpenes, and aroma precursors as noble rot progressed; related chemical differences remained detectable in the finished wines.[2] The study clarifies why botrytized Sémillon can combine concentration with a character distinct from dry Sémillon, but it does not make the outcome predictable. Berry ripeness, infection timing, airflow, rain, and harvest selection still determine whether rot is useful or destructive.
Selective picking is therefore essential in classic sweet-wine production. Several passes may be needed to take suitably affected berries while leaving others to develop or rejecting unhealthy fruit. The concentrated crop yields little juice and can be difficult to ferment. Residual sugar comes from the combination of concentrated must and fermentation decisions; noble rot itself does not determine the finished sweetness.
Texture and the Sauvignon Blanc partnership
Dry Sémillon can have substantial body without especially high acidity. That combination often explains the rounded or waxy impression more usefully than a long list of flavours. Skin and juice handling, fermentation in barrel, time on lees, and maturation can broaden it further, while an early harvest and neutral vessels can make a much leaner wine. With bottle age, fruit may recede as honeyed, toasted, or wax-associated aromas emerge, changing perceived texture even when the liquid has not become literally more viscous.
In Bordeaux blends, Sauvignon Blanc commonly supplies a more conspicuous aromatic and acid line, while Sémillon contributes breadth and continuity across the palate. The distinction is useful but not absolute: harvest date and cellar practice can make Sauvignon broad or Sémillon brisk. Changing the proportions lets a producer adjust freshness, texture, aroma, and development in bottle without imposing a fixed regional recipe.
Bordeaux and Hunter Valley
Bordeaux
Bordeaux uses Sémillon for both dry and sweet wine. In dry Pessac-Léognan, the current specification permits Sémillon, Sauvignon Blanc, Sauvignon Gris, and Muscadelle; its account of the appellation identifies Sauvignon Blanc and Sémillon as the principal pair.[3] Picking decisions, barrel fermentation or maturation, and lees contact can emphasize Sémillon's volume and ageing capacity. The result may show the familiar waxy breadth, but fresher, Sauvignon-led blends and restrained cellar work produce a different balance.
In Sauternes, Sémillon's rot sensitivity becomes central to the style. The appellation permits the same four varieties and requires overripe grapes with noble rot, harvested by successive manual selections.[3:1] Sémillon is central in practice, but the rules do not prescribe one blend percentage. Sauvignon Blanc can bring acidity and a different aromatic contribution, while the share and stage of botrytized fruit, fermentation, and maturation shape the final wine as much as varietal proportion. Bordeaux Sémillon is therefore not one style: it spans dry blends and sweet wines transformed by fungal infection and concentration.
Hunter Valley
Hunter Valley turns a warm, humid environment toward an almost opposite dry expression. The established approach picks Sémillon early to preserve acidity, ferments it dry in stainless steel, generally avoids obvious oak, and bottles it young. Early release can be light-bodied, restrained, and citrus-led despite the region's warmth. Timing is crucial: it can preserve freshness and shorten exposure to summer rain, but picking too early can leave a hard or undeveloped wine.
Bottle rather than barrel is the traditional agent of transformation. In a study following 16 commercial Hunter Valley Sémillons through three years of cellaring, primary fruit attributes generally declined while honey, toast, and orange-marmalade attributes became more prominent.[4] That limited sample does not establish one ageing path for every wine, but it supports the regional contrast: mature Hunter Sémillon can acquire richness and developed aromas without having been oak-aged. Bordeaux often builds texture through blending, later harvest, botrytis, and cellar maturation; Hunter Valley commonly begins with early-picked varietal wine and asks time in bottle to supply complexity.
