Sercial
Also known as Esgana Cão, Esgana-Cão
Sercial is a Portuguese white grape best known for the dry end of Madeira's fortified-wine tradition. Its marked acidity helps give those wines a firm, refreshing structure despite their alcohol and retained sugar. On the Portuguese mainland, Esgana Cão is another name for the same variety; an official European Union publication for Vinho Verde lists the pairing as “Sercial - Esgana-Cão.”1. The grape on Madeira
The Instituto do Vinho, do Bordado e do Artesanato da Madeira (IVBAM), the island's regulatory institute, describes small, compact, conical bunches with greenish-yellow berries. It emphasizes both high acidity and astringency in its cultivar account. What dry means here
Sercial's association with dry Madeira reflects a production tradition. Fortification interrupts fermentation at the producer's chosen point; letting yeast consume more sugar first gives a drier result. The grape's acidity then contributes to the balance of the finished wine.
Madeira uses its own sweetness vocabulary. IVBAM's indicative sugar figures allow appreciable residual sugar in wines called dry, and the institute explicitly presents these figures as guidance. Maturation and the bottle
A Sercial Madeira also reflects the island's distinctive maturation methods. In canteiro, wine ages in casks in warm parts of the cellar, developing through heat and oxidation. Other Madeiras undergo controlled heating through estufagem. These processes add a major source of developed aroma beyond the starting grape.4. Age indications and harvest dates provide a further distinction between bottles. Sercial identifies the variety, while a blend's age indication or a harvest-dated designation identifies a different part of the wine's history.
